Banana Shaped, sweet and dense Appalachian heirloom winter squash. It was bred by the Cherokee Nation in the early 1800’s.It is a rare variety and wonderful.The Cherokee of North Georgia, Southern Tennessee and Southwestern North Carolina developed a variety of‘sweet squash’.Due to the “Trail of Tears” tragedy the squash was made less and less known making it now a rare variety but one well worth trying. It is also called North Georgia Candy Roaster squash.

This is a wonderfully sweet squash and great for pies or breads, or just cooked for dinner.They freeze well - just roast or boil them to tenderness and cut up and freeze.They are a great substitute in cooking for pumpkin or sweet potatoes recipes.They can even be fried, or roasted.If you cut them and place them in the microwave for three or four minutes they are easier to peel. They can reach 8 - 15 lb. and should pick when they reach 12 - 18” long and about 6” in diameter.

The wonderful part of this winter squash is that they will store in a cool dark place for about 5 months.The flavor will improve as it is stored, making them even sweeter and is pumpkin like with nutty overtones, and improving with age.
